Ukai-tei Kaohsiung Executive Chef Executive Chef Namba Kai of Ukai-tei Kaohsiung is devoted to conveying happiness through cuisine. His culinary career has been deeply rooted within the UKAI Group, with extensive hands-on experience at several landmark locations, including Hachioji, Omotesando, Ginza, and Yokohama. Through these distinguished appointments, he has cultivated comprehensive expertise spanning both teppanyaki and Western culinary traditions, along with a profound understanding of fine dining operations and meticulous culinary execution.

Chef Namba specializes in showcasing seasonal ingredients with refined technique, presenting a style that is both delicate and sincere. He places great emphasis on temperature, aroma, and the holistic five-sense dining experience. At the same time, he remains attentive to green gastronomy and sustainability, striving to achieve harmony between exceptional flavor and environmental responsibility.

Since arriving in Kaohsiung, Chef Namba has sought to integrate the spirit of UKAI cuisine with Taiwan’s local ingredients—crafting seasonally inspired dishes that reflect the island’s terroir, and delivering table experiences imbued with both warmth and joy.

Reservation Policy

Important Notes

・Deposit: General reservations NT$1,000 per person; Special holidays NT$1,000 per person. ・Cancellations made within 24 hours prior to the reservation time will incur a charge of 100% of the deposit. ・Cancellations made 24–48 hours prior will incur a charge of 50% of the deposit. ・Cancellations made 48–72 hours prior may retain the deposit for three months for future use. ・Cancellations, date changes, or party size adjustments made more than 72 hours in advance are eligible for a full refund of the deposit. ・For reservations of special menus, cancellations made within 5 days prior will incur a 20% charge of the menu price as an ingredient preparation fee. Additional charges may apply for specially requested premium ingredients.

・Reservations will be held for 10 minutes. Please inform us in advance of any changes to your schedule. ・For special event bookings (e.g., private buyouts, guest chef events), cancellations made within 7 days will incur a 50% deposit charge. ・If unable to attend due to suspension of public transportation or severe weather conditions, your reservation may be rescheduled. ・No-shows or failure to respond to contact attempts will result in a charge of the full deposit. ・A reduction in party size is subject to the same cancellation charges. ・For increases in party size, please call in advance to confirm availability, as seating is limited. ・Smart elegant casual attire is required. Gentlemen are requested not to wear slippers or sandals; ladies should not wear slippers (sandals must have straps). ・The restaurant welcomes guests aged 10 and above only (except for full-venue private events).
