Embracing Taiwan’s distinct climate and local produce as a source of creative nourishment, Chef Namba challenges himself to craft an experience that declares: “This is an Ukai-tei that could only exist in Taiwan.” In the upcoming Winter Menu, guests will witness an intimate dialogue between Japanese craftsmanship and local Taiwanese ingredients.
The wild, mountain-grown Makauy (peppery litsea) imparts a subtle hint of lemongrass, gently enveloping slow-cooked black-bone chicken as a whisper of smoky aroma blows through like a warm winter breeze. Whole Taiwanese turnips, slow-braised to a velvety melt-in-the-mouth texture, intertwine with the deep, earthy notes of black truffle, offering a moment of serene solace to the soul upon the very first bite.
